Kimberly's Chicken Salad
makes about 12 to 15 Servings

5- Cups cooked, diced chicken
3 Cups chopped pecans
1 (12-ounce) bag dried sweetened cranberries
2 1/2 Cups mayonnaise
1 1/2 Cups blue cheese crumbles
1 cup dill pickle relish
1 tablespoon coarse-ground black pepper
1 teaspoon sea salt

1) In a large bowl, combine chicken, pecans, cranberries, mayonnaise, blue cheese, relish., pepper, and salt. Cover, and refrigerate overnight.

Note: Serve on Wheat Berry Bread


Hot Pepper Jelly & Goat Cheese
Having a dinner party? This quick appetizer

1 package plain goat cheese 11 oz. log
1 jar Hot pepper jelly of choice
1 cucumber or box of crackers


Individual Serving:
1. slice the cucumber or use a cracker
2. spread with goat cheese
3. top with the hot pepper jelly of your







Alternative Group Serving:
1. Place the goat cheese on a large plate
2. Pour the jar of hot pepper jelly over the goat cheese
3. Surround the goat cheese with a thick cracker
